Types of knife Sharpener
There are many different types of knife sharpener available, but these fall into a number of distinct categories. The most obvious division is between manual and electric knife sharpeners. Both of these work with the same principles: scraping an abrasive surface against the metal of your knife blade to remove a little material from the knife, sharpening it.
The main difference between manual and electric knife sharpeners is which surface is moving. With a manual knife sharpener, you use the strength of your arms to draw the knife blade across the abrasive surface, while electric knife sharpeners have their abrasive surfaces mounted on spinning wheels, increasing the friction as you draw the knife through.
In both cases, there are different abrasive materials available for knife sharpening. Whether your knife sharpener is electric or manual, it will have a certain level of texture and a different material. A coarser grit level is great for removing rough surfaces at high speed, restoring a dull blade to a more effective level of sharpness, while finer grits remove less material and act slower.
These finer gritted abrasives are generally used as a final stage of the sharpening process, polishing the cutting edge of your blade and refining it to the smoothest and sharpest state it can be in. Knife Sharpening Angles
Different knives are used for different purposes, and these different purposes often require your knives to be sharpened to different angles. As well as this, some tools will only sharpen your blades to specific angles, which can further dictate which angles you sharpen your knives to. Most standard models of electric knife sharpener only sharpen to a single angle of 20 degrees, which is the most common angle for most larger American style kitchen knives. If you want more angles than this, then the best option is to buy a manual sharpening stone and adjust your angle by hand, although this requires a lot more effort than an electric knife sharpener. Some models of knife sharpening kit include an angle guide, allowing you to adjust your angle to fit whichever needs you may have for each blade.
While you might think that sharper angles would be better in every situation, this is not always the case. Sharper blades are more delicate and require much more maintenance and regular sharpening in order to keep them in good condition and maximize sharpness. They might cut more easily, but this added delicacy and required maintenance time can pose a problem if you are not prepared to dedicate a lot of time to looking after your knives.
In general, fillet knives, paring knives, and razors should be kept sharper than your other knives, with an angle of 12 to 18 degrees in most cases. The metal used in your knife can also affect how sharp you should keep it. Harder metals are generally able to hold a sharper edge without being too fragile. If you have got a high-quality chef’s knife made from a particularly strong steel blend, then you could potentially sharpen it as far as 12 degrees, but it will require more frequent sharpening and more maintenance time if you do that.
When a knife blade gets worn down and battered, the cutting edge of the blade can become misaligned and bent, losing its straightness. Honing is the process of straightening up that misaligned edge.
Honing should be performed more often than sharpening. If you are serious about your knives, then it is best to hone your knife before every time you use it, and after every time you wash and dry the blade. This is done with a sharpening steel; despite the name, sharpening steels do not sharpen the blade, but only hone it, realigning the cutting edge. Sharpening steels are cylindrical steel rods about 12 inches in length, and sometimes with one flattened side.
To hone your knife, run the sharp edge of your blade down the sharpening steel to restore its alignment. This is also usually done as the last stage of sharpening a knife.
